Instant Pot Lentil Soup
I've tried many time to take an 'attractive' photo of the lentil soup I make most weeks in my Instant pot but not, each time it just resembles 'Brown muck in a bowl' which really doesn't show off the amazing taste! so this time I went for a before shot of the beautiful colours that go into that brown muck.
I can droan on for hours about the brilliance of lentils (cheap, easy, nutritious, great texture, tasty etc) love to use this as we work day lunch as it easily keeps me going through to dinner and one batch will last me a good few days.
Change the spices to taste and add more water when reheating if you prefer a more liquid lentil soup.
Ingredients
2 Cups or 400 grams Of Dried Green Lentils
1 Cup or 200 grams of Red Lentils
7 Cups or 1.5 litres of either Chicken or Vegetable Stock
1 tsp Tumeric
1 tsp Hot Chilli Powder
Handful of Spinach
Method
20 minutes High Pressure in the Instant pot and 10 minutes NPR
Stir in Spinach once you have removed the lid and serve
