Chicken Tinga (Weight Watchers 0 sp on Flex)

Ingredients

4 chicken breasts (whole) 2 jalapeno Peppers (burnt the skins over flames and roughly chop) 1 birds eye chilli (keep whole unless you are a sadist) half a tin of chopped tomatos 2 fresh tomatos (roughly chopped) 2 shallots (roughly chopped ) 3 garlic cloves (finely chopped) 1 tbsp Paprika 1 tbsp Cayenne Pepper Half a chicken stock pot/cube made up in 50 ml water Half a tbsp Hot Chilli Powder

Method

Saute mode wait to heat up then add some fry light followed by the onion and jalapeno and fry for a few minutes stirring every so often

Add the garlic and cook for a further couple of minutes, add the spices and fresh tomato and cook for a further couple of minutes

Add the stock and deglaze the bottom of the pot, add the tinned chopped tomatoes along with the chicken and stir turning off saute mode add dried chilli flakes I used chipotle and jalapeno.

Poultry mode for 15 min and then NPR for 20 mins, if too wet remove the chicken and shred in a separate bowl and saute the remaining liquid once it is down to the level you require add the chicken back in and stir
