Potato, Leek and Chicken Soup


Chicken Soup

I fancied some Leek and Potato soup and I fancied some chicken so I combined the two together. Works wonders, especially for poorly people with winter colds. This makes a big old portion that will last a few days. Feel free to add some hot chilli power or some fresh chills for more of a kick, I was making this for a poorly person so I kept it quite simple.

Serves 6

Ingredients

450g Boneless Chicken Thighs or Breasts

1 Cup or 200g Dried Red Lentils

2 Leeks Chopped

1 Large Potato Peeled and chopped

2 Shallots Chopped

3 Garlic Cloves Crushed

9 Cups or 1 Litre Chicken or Vegetable Stock

Pepper To Season

Method

Set the Instant Pot to Saute

Use Oil or Fry Light to fry the Garlic, Onion/Shallots and Leeks until the onion goes clear

Add the Potato and sweat under a lip for a further few minutes

Add in the Stock, the Chicken and the cup of Lentils

Set Pot to Manual and HP for 10 minutes, NPR

Remove the chicken to a bowl and pull apart (should just fall apart) blend the rest of the soup with a hand blender before adding the Chicken back in and checking seasoning before serving with some chunky buttered bread of course.
