One Pot Beef Chilli with Brown Rice
True one pot Beef Chilli with rice using the Pot in Pot (PIP) method. Don't laugh but for my PIP I use a £2 stainless steel dog food bowl from Tesco which is the perfect size to fit on the trivet and take around three portions of rice. Make this as hot as you can take! I used the left overs and served it the following day with tortillas made under with grill with a corn wrap and paprika salt
Serves 4
Ingredients
500g Lean Beef Mince
1 Tin Chopped Tomatos
1 Tin Kidney Beans
1 1/2 tsp Tomato Puree
1 Beef stock pot (the melting type as no water added)
1 Medium Onion chopped
2 Garlic Cloves minced
1 tbs Ketchup
1 tbs brown sauce
2 tbs Worcestershire sauce
Pinch of Dried Oregano
Chilli sauce or Chilli powder to your taste
1 Chopped Medium strength chilli
390 grams or 2 Cups Brown Rice
320 ml or 2 1/2 Cups of Water
Method
Set the Instant Pot to Saute Mode and add 1 tsp oil
Once heated add the chopped onions, chopped chilli and garlic and fry until the onion is starting to go clear
add the mince and tomato puree and fry. Break up the mince and continue until it has all browned
add the chopped tomatos and Kidney Beans and stir
Add the stock melt and stir until this disolves
Add in the Ketchup, Brown sauce, Worcestershire Sauce and Oregano
Once stirred check how liquid the mixture is and if you fee it needs a little more add some water in. Remember it won't lose much liquid during the cooking process
Place a trivet on top of the mixture with a steel or silicone pot containing the Rice and Water. The bottom of you pot will get dirty but it won't make any difference to the dish!
HP for 14 minutes and NPR 15 If you are using White Rice instead you can go for a shorter cooking time of 10-11 minutes
Serve with some Instant Pot home made yogurt, cheese, guacamole etc
