Instant Pot Carrot and Coriander Soup
Ingredients (serves 4)
5 Large Carrots chops into half an inch thick rounds
1 chopped medium potato
1 white onion chopped
2 cloves pressed garlic
3 tbsp ground coriander
1 bunch chopped fresh coriander (up the ground coriander if you don't have any fresh)
1 tsp hot chilli powder if you want a bit of a kick
600 ml or 3 cups of Chicken or vegetable Stock
You can also add any other root vegetables you have laying around or switch out the potato
Method
Set the Instant Pot to Saute
Add oil and fry the Onions and Garlic for 3 minutes
Add the coriander and chilli powder and fry for 2 minutes
Add the chopped carrots and any other veg and sweat for 3-4 minutes
Add the stock and fresh coriander (Keep some for adding right at the end)
