Green Split Pea Hummus
2 for 1 on dried legumes in the supermarket so picked up some Split Green peas so try some recipes with. One was a potato and pea curry the other this hummus. I love the way the peas really blend down into a smooth paste texture. Had this for lunch with some crackers while it was still warm and plenty left over to dip into (or just eat with a spoon straight from the fridge? why not) so quick and easy to do.
Ingredients
2 Cups of split peas (Instant pot measuring cup)
4 1/2 cups of water
1 tbs Cumin
1 Large lemon, zest and juice
3 tsp tahini
2 tsp ground corriander
3 garlic cloves
Method
Use the Pot in Pot method to cook the peas
Place the peas and water into a bowl on the trivet
Also add two cups of water to the main pot
HP for 20 minutes
QPR
Place all the ingredients along with the cooked peas into a food processor and process until a smooth paste
Taste as and adjust any ingredients
service with some warm pitta bread and some chipotle sauce
If you wish you can also drizzle in some olive oil
