Instant Pot Beef Masala Curry with PIP Rice
Ingredients (serves 4)
450g of Stewing Beef chopped
1 white onion chopped
2 garlic cloves pressed
1 tin of chopped tomatoes
2 tbsp Masala curry powder
1 tsp Cumin
1 tsp ground coriander
2 tsp hot chilli powder (to taste based on how spicy you like things)
Pinch of dried chilli flakes
Chopped bunch of coriander
2 cups of white Basmati Rice
Method
Place the Instant Pot on Saute mode
Add oil or fry light to the instant pot and fry the onions and garlic for 2 minutes
Add all the spices and continue to fry for 3 minutes
Turn off Saute mode and allow to cool for 1 minutes
Add the chopped tomatoes and 2 Instant Pot measure cups or 300ml of cold water and deglaze the pot
Add the Rice to a suitable smaller pot that can be used in the inner pot. I used a cheap dog bowl...metal works best for conducting the heat
Add 2 cups of water to the rice
Place the metal trivet (or a longer legged one if you have one) on top of the beef with the rice pot on top
Set to Manual mode for 12 minutes. Natural Pressure Release (NPR)
Add chopped coriander to serve
