4 Minute Instant Pot Roast Beef
Finally after seeing all those gorgeous photos of perfectly cooked, slightly pink in the middle 4 minute beef I had to give it a go myself. Yes all the reports are true, this really does produce a melt in the middle, moist beef joint with technically 4 minutes cooking time but the important step is the long NPR which is effectively an extended resting period where all the lovely meat juices can be absorbed back in. I also use the pot to parboil the roast potatoes before I started on the beef and the timings worked out just perfectly.
Ingredients
Beef Joint - I used an 800g British Beef roasting joint
Salt and Pepper to season
Corn flour
Gravy Granules
Method
Heat 1 tsp of oil using the Saute function on the Instant pot and sear the joint on each side for around 2 minutes per side.
As you turn the joint sprinkle on salt and pepper to taste.
Remove the joint, add 200m of beef stock to deglaze and allow pressure to be reached.
Please the joint back into the pot on a trivet.
Close the lid and HP for 4 minutes.
NPR on keep warm for 50 minutes.
Remove the joint and leave to rest for a further 20 minutes if you have the time before slicing.
While the meat was resting I turned the pot back to saute mode and you can either add gravy granules or a cornflour paste (made with around 1 tsp of cornflour and cold water) to thicken to a rich gravy for serving.
