Cajun Chicken
Quick Sunday evening tea with a pack of chicken legs and thighs in the fridge so put them to good use in the Instant Pot with these spicy Cajun Chicken pieces. For Instant Pot chicken these actually came out quite crispy but with the lovely soft fall off the bone chicken inside.

Ingredients
Chicken thighs and drumsticks
Salt and Pepper
Cajun Rub
Fry Light garlic spray
Method
Spray chicken with oil spray or fry light garlic
Cover in Cajun rub and a bit of salt and pepper
Put chicken on trivet in IP and add two cups of water
Put lid on and make sure vent is on sealing
Use poultry setting 20 mins and NPR
